Ingredients
  

Main Ingredients
  • 2 medium yellow squash, sliced into ¼ inch rounds Choose fresh, firm squash.
  • 1 cup breadcrumbs (panko works great!) Panko breadcrumbs will add extra crunch.
  • 1 cup shredded mozzarella cheese Can substitute with other cheeses.
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 large egg, beaten For binding the breadcrumbs.
  • as needed Olive oil spray For spraying on top of coated rounds.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and slice the yellow squash into ¼ inch rounds.
  3. In a shallow bowl, mix together the breadcrumbs, mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
Coating
  1. Dip each squash round into the beaten egg, letting excess egg drip off.
  2. Press the squash rounds into the breadcrumb mixture to adhere the coating.
  3. Place the coated rounds on the prepared baking sheet and repeat until all squash slices are coated.
  4. Lightly spray the tops of the coated rounds with olive oil spray.
Baking
  1. Bake in the preheated oven for 20 minutes, flipping the rounds halfway through.
  2. Remove from the oven when golden brown and let cool slightly before serving.

Notes

Experiment with different cheeses like cheddar or pepper jack for added flavor. For a vegan version, replace the egg with a ground flaxseed and water mixture.
