  • 1 cup millet, rinsed Rinse under cold water to remove bitterness.
  • 3 cups milk (or any plant-based milk) Can use almond milk, oat milk, etc.
  • 2 tablespoons maple syrup Adjust to taste.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • 1 pinch salt To enhance the overall flavor.

Method
 

Preparation
  1. Rinse the millet thoroughly under cold water in a fine-mesh sieve to remove any debris and bitterness.
  2. In a medium saucepan, combine the rinsed millet, milk, maple syrup, vanilla extract, and a pinch of salt. Stir well.
Cooking
  1. Place the saucepan on medium-high heat and bring the mixture to a gentle boil.
  2. Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 20-25 minutes, or until the millet is tender and the porridge has thickened to your liking. Stir occasionally to prevent sticking.
  3. Remove from heat and let it sit for a couple of minutes.
Serving
  1. Serve warm, topped with fresh berries, sliced bananas, or your favorite toppings.

Notes

Store any remaining porridge in an airtight container in the refrigerator for up to 3-4 days. When reheating, add a splash of milk to loosen consistency. Can freeze portions for later use.
