- Begin by placing the peeled and cut potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat, cooking until tender (about 15-20 minutes).
- Once cooked, drain the potatoes well. Return them to the pot or a large mixing bowl. Using a potato masher or an electric mixer, mash the potatoes until smooth.
- Stir in the softened cream cheese until well combined. Follow it up with the melted butter and pour in the milk, mixing until you achieve your desired creamy consistency.
- Taste and season with salt and pepper to your preference.
- Just before serving, top with fresh herbs for a pop of color and flavor.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a splash of milk and gently warm them on the stovetop over low heat, stirring frequently.
