Preparation
  1. Begin by placing the peeled and cut potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat, cooking until tender (about 15-20 minutes).
  2. Once cooked, drain the potatoes well. Return them to the pot or a large mixing bowl. Using a potato masher or an electric mixer, mash the potatoes until smooth.
  3. Stir in the softened cream cheese until well combined. Follow it up with the melted butter and pour in the milk, mixing until you achieve your desired creamy consistency.
  4. Taste and season with salt and pepper to your preference.
  5. Just before serving, top with fresh herbs for a pop of color and flavor.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a splash of milk and gently warm them on the stovetop over low heat, stirring frequently.
