Ingredients
  

Seafood Base
  • 1 cup cooked crab meat, flaked
  • 1 cup cooked shrimp, peeled and deveined
Vegetables
  • 1 cup diced bell peppers (red and green)
  • 1 cup chopped onions
Casserole Components
  • 2 cups cooked rice
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese divided for topping
Seasonings
  • 1 teaspoon paprika
  • 1 teaspoon Old Bay seasoning
  • to taste Salt and pepper
Garnish
  • optional Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, add a dash of oil over medium heat and sauté the diced bell peppers and onions until soft and aromatic, about 5-7 minutes.
  3. In a large mixing bowl, combine the sautéed vegetables with crab meat, cooked shrimp, rice, cream of mushroom soup, paprika, Old Bay seasoning, and half of the cheddar cheese. Mix thoroughly.
  4. Season with salt and pepper to taste.
Assembly and Cooking
  1. Transfer the mixture to a greased casserole dish, spreading it evenly.
  2. Sprinkle the remaining cheddar cheese on top.
  3. Bake for 25-30 minutes, or until bubbling hot and the cheese is golden brown.
  4. Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
