Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, add a dash of oil over medium heat and sauté the diced bell peppers and onions until soft and aromatic, about 5-7 minutes.
- In a large mixing bowl, combine the sautéed vegetables with crab meat, cooked shrimp, rice, cream of mushroom soup, paprika, Old Bay seasoning, and half of the cheddar cheese. Mix thoroughly.
- Season with salt and pepper to taste.
Assembly and Cooking
- Transfer the mixture to a greased casserole dish, spreading it evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake for 25-30 minutes, or until bubbling hot and the cheese is golden brown.
- Remove from the oven, let cool slightly, and garnish with fresh parsley before serving.
