Preparation
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper for easy cleanup.
- In a large bowl, combine the softened butter, brown sugar, and granulated sugar. Use a hand mixer or stand mixer to cream until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture until just combined. Stir in the oats, chocolate chips, and nuts if using.
- Using a cookie scoop or your hands, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. They may look slightly underbaked in the centers but will firm up as they cool.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
To keep your Cowboy Cookies fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze them and thaw when ready to serve.
