  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped nuts (optional, like pecans or walnuts) Optional ingredient for added texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper for easy cleanup.
  2. In a large bowl, combine the softened butter, brown sugar, and granulated sugar. Use a hand mixer or stand mixer to cream until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture until just combined. Stir in the oats, chocolate chips, and nuts if using.
  6. Using a cookie scoop or your hands, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. They may look slightly underbaked in the centers but will firm up as they cool.
  2. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

To keep your Cowboy Cookies fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze them and thaw when ready to serve.
