Ingredients
  

For the cream mixture
  • 1 cup coconut cream Opt for full-fat coconut cream for a richer flavor.
  • 1 cup heavy whipping cream Make sure it's cold before whipping.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
For layering
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 package graham crackers (lightly crushed) This will create the crunchy base.
  • toasted coconut flakes (optional) For serving and decoration.
  • chocolate drizzle (optional) For serving and decoration.

Method
 

Preparation
  1. In a mixing bowl, combine the coconut cream, heavy whipping cream, sugar, and vanilla extract. Beat the ingredients on medium speed until they form soft peaks.
  2. In your desired serving dish, start layering the crushed graham crackers at the bottom to create a crunchy base.
  3. Spread a generous layer of the coconut cream mixture over the graham crackers.
  4. Alternate between layers of graham crackers and coconut cream until your dish is filled, finishing with a layer of coconut cream on top.
  5. Cover the dessert with plastic wrap and refrigerate for at least 2 hours, or until set.
  6. Before serving, sprinkle toasted coconut flakes on top or drizzle with chocolate.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in individual servings and thaw in the refrigerator before serving.
