Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
- In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
- In another bowl, combine the granulated sugar, brown sugar, and oil until it’s well mixed. Then add the egg and apple cider, mixing vigorously until fully combined.
- Gently fold in the diced apple and any nuts if you’re using them.
Baking
- Pour the wet ingredients into the dry ingredients, stirring until just combined; the batter should be slightly lumpy.
- Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
Notes
For best results, don’t overmix the batter. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
