Preparation
- In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, cumin, paprika, salt, pepper, and olive oil until well combined.
- Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a more intense flavor).
Cooking
- Heat your grill to medium-high heat (about 375°F-400°F). If you’re using a grill pan on the stove, heat it over medium heat.
- Remove the chicken from the marinade and place it on the grill. Cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken has nice grill marks.
- Take the chicken off the grill and let it rest for 5 minutes before serving.
Serving
- Garnish with additional fresh cilantro and lime wedges if desired.
Notes
For best flavor, marinate for up to 2 hours. Serve with rice, tortilla chips, or a corn salad.
