  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 tablespoon olive oil For sautéing.
  • 1/2 cup diced onion White or yellow onion works well.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 can (10.5 oz) cream of chicken soup Low-fat can be used for a lighter version.
  • 1/2 cup milk Substitute with chicken broth for more flavor.
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust based on personal preference.
  • to taste Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and sauté for an additional minute until fragrant.
  4. Add the shredded chicken to the skillet, stirring it in with the sautéed onion and garlic.
  5. Pour in the cream of chicken soup and milk (or chicken broth). Mix well to combine all the ingredients.
  6. Add the dried thyme, salt, and pepper to taste.
  7. Allow the mixture to simmer for about 5-10 minutes, stirring occasionally, until heated through and the flavors meld beautifully.
  8. Remove from heat and garnish with fresh parsley. Serve immediately over rice, noodles, or your choice of sides.

Notes

For a lighter version, substitute half of the cream of chicken soup with Greek yogurt. Avoid overcooking the garlic to prevent bitterness.
