Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef until it’s no longer pink, about 5-7 minutes. Drain excess fat if necessary.
- Add the can of Rotel tomatoes and the cream of mushroom soup to the skillet. Stir until all ingredients are combined, and let it simmer for a couple of minutes.
- In a greased 9×13-inch baking dish, spread the beef mixture evenly and sprinkle with salt and pepper.
- Layer half of the shredded cheddar cheese over the beef mixture.
- Arrange the frozen tater tots on top of the beef and cheese layers in a single, even layer.
- Finish by sprinkling the remaining cheddar cheese on top of the tater tots.
Baking
- Place the casserole in the preheated oven and bake for 30-35 minutes or until the tater tots are golden brown and the cheese is bubbly.
- Once baked, let it cool slightly before serving.
Notes
This dish can be customized with different veggies or cheeses. Make-ahead option available: prepare in advance, refrigerate, and extend baking time slightly to accommodate.
