  • 1 pound ground beef
  • 1 can (10 oz) Rotel diced tomatoes with green chilies adds zesty flavor
  • 1 can (10.5 oz) cream of mushroom soup provides creaminess
  • 1 cup shredded cheddar cheese divided into two portions
  • 1 bag (32 oz) frozen tater tots for topping the casserole
  • to taste salt and pepper for seasoning

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until it’s no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the can of Rotel tomatoes and the cream of mushroom soup to the skillet. Stir until all ingredients are combined, and let it simmer for a couple of minutes.
  4. In a greased 9×13-inch baking dish, spread the beef mixture evenly and sprinkle with salt and pepper.
  5. Layer half of the shredded cheddar cheese over the beef mixture.
  6. Arrange the frozen tater tots on top of the beef and cheese layers in a single, even layer.
  7. Finish by sprinkling the remaining cheddar cheese on top of the tater tots.
Baking
  1. Place the casserole in the preheated oven and bake for 30-35 minutes or until the tater tots are golden brown and the cheese is bubbly.
  2. Once baked, let it cool slightly before serving.

Notes

This dish can be customized with different veggies or cheeses. Make-ahead option available: prepare in advance, refrigerate, and extend baking time slightly to accommodate.
