  • 1 loaf 1 loaf of crusty bread (Italian or French)
  • 2 cups 2 cups fresh spinach leaves, chopped Use fresh spinach for best results.
  • 1 cup 1 cup ricotta cheese
  • 1 cup 1 cup shredded mozzarella cheese
  • 1/2 cup 1/2 cup grated Parmesan cheese
  • 2 cloves 2 cloves garlic, minced
  • 1 teaspoon 1 teaspoon salt
  • 1/2 teaspoon 1/2 teaspoon pepper
  • 1 tablespoon 1 tablespoon olive oil For brushing the bread.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut a pocket in the middle of the loaf of bread, being careful not to cut through the edges. Remove some of the bread inside to create more room for the filling.
  3. In a bowl, combine chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
  4. Stuff the pocket of the bread with the cheesy spinach mixture, ensuring to pack it in well.
  5. Lightly brush the outside of the bread with olive oil.
  6. Place the stuffed bread on a lined baking sheet and bake for 20-25 minutes, or until the bread is golden and the cheese is bubbly.
  7. Remove from the oven, let cool for a few minutes, slice, and enjoy.

Notes

Pair with a fresh garden salad or creamy tomato soup. For storage, wrap in foil or place in an airtight container in the fridge for up to 3 days. Reheat in the oven to revive crispiness.
