  • 2 cups cooked rice (white or brown)
  • 2 cups cooked chicken, diced (grilled or boiled)
  • 2 cups fresh or frozen broccoli florets
  • 1 can (10.5 oz) cream of chicken soup or cream of mushroom for a vegetarian option
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup French fried onions optional for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, diced chicken, broccoli florets, cream of chicken soup, milk, garlic powder, salt, and pepper.
  3. Stir the mixture until all the ingredients are well combined and coated in the creamy sauce.
  4. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. Sprinkle the shredded cheddar cheese generously over the top.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. In the last 5 minutes of baking, sprinkle French fried onions on top for an added crunch.
  3. Remove from the oven and let cool for a few minutes before serving.

Notes

For best results, use leftover chicken or vegetables. Consider a vegetarian version with cream of mushroom. Avoid overcooking broccoli for optimal texture.
