Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
- Stir in half the enchilada sauce and let it simmer for 2-3 minutes.
Assembly and Baking
- Lay out a tortilla and fill it with the beef mixture. Sprinkle with shredded cheese, roll it up tightly, and place seam-side down in a greased baking dish.
- Repeat this process with the remaining tortillas. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, and enjoy.
Notes
Customize your fillings by adding veggies like bell peppers. Best served fresh, but leftovers can be reheated covered with foil. Store leftovers in an airtight container in the fridge for up to 3 days.
