Preparation
- Preheat your oven to 425°F (220°C).
- In a medium saucepan, combine water and unsalted butter over medium heat. Stir until the butter melts completely.
- Add the all-purpose flour quickly and stir vigorously to create a thick dough. Cook for about 1-2 minutes to remove excess moisture.
- Remove the saucepan from heat and let the dough cool for about 5 minutes. Then, one by one, beat in the eggs until the mixture is smooth and glossy.
- Fold in your grated cheese, salt, and pepper into the dough. Optionally add herbs if desired.
- Using a piping bag or a spoon, place dollops of the dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 20-25 minutes until they puff up and are golden brown. Avoid opening the oven door during baking.
- Let them cool briefly and enjoy while warm!
