Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
Wet Ingredients
  • 1 cup milk (or any milk substitute)
  • 1 large egg
  • 2 ripe bananas, mashed
  • 2 tablespoons melted butter Plus more for cooking

Preparation
  1. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt until well combined.
  2. In another bowl, mix the milk, egg, mashed bananas, and melted butter until smooth.
  3. Pour the wet ingredients into the dry mixture and gently stir until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat and melt a small amount of butter to coat the surface.
  2. Use a ¼ cup measuring cup to pour the batter onto the skillet. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
  3. Carefully flip the pancake and cook for an additional 2-3 minutes until golden brown. Remove and keep warm while you repeat with the remaining batter.
Serving
  1. Stack your pancakes high and add your favorite toppings like syrup or fresh fruit. Dig in while they’re warm and enjoy!

Notes

Use overripe bananas for sweeter pancakes. Keep pancakes warm in a 200°F oven if making a large batch.
