Ingredients
  

For the chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets, steamed and chopped
  • 1 cup cheddar cheese, shredded Can be swapped for mozzarella or gouda
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Optional fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper for easy cleanup.
  2. In a mixing bowl, combine the steamed broccoli, cheddar cheese, cream cheese, garlic powder, salt, and pepper. Mix until well blended.
  3. Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  4. Generously fill each chicken breast pocket with the broccoli and cheese mixture.
Cooking
  1. In a large skillet over medium heat, add olive oil. Sear each stuffed chicken breast for about 2-3 minutes per side, or until golden brown.
  2. Transfer the chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature).
  3. Let the chicken rest for a few minutes, then garnish with fresh parsley before serving.

Notes

For a crispier exterior, broil the stuffed chicken for the last few minutes of cooking. Store leftovers in an airtight container for up to 3 days or wrap tightly and freeze for up to 3 months.
