Ingredients
  

Base Ingredients
  • 1 cup rolled oats
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/2 cup cream cheese (softened) Can substitute with non-dairy cream cheese
  • 1/2 cup protein powder (vanilla flavor works best)
  • 1/4 cup honey or maple syrup Sweetness can be adjusted to preference
  • 1 tsp vanilla extract
  • a pinch salt
Filling Ingredients
  • 1/2 cup fresh blueberries (or frozen, thawed) Be careful when folding to keep them intact

Method
 

Preparation
  1. In a large mixing bowl, combine the rolled oats, Greek yogurt, cream cheese, protein powder, honey (or maple syrup), vanilla extract, and salt. Stir until well combined. You might find it easier to use your hands to mix it all together!
Folding
  1. Gently fold in the fresh blueberries into your mixture, being careful not to break them up too much.
Forming Bites
  1. With clean hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat until the mixture is used up. You should get about 12-15 bites depending on how big you make them!
Chilling
  1. Place your protein bites on a baking sheet lined with parchment paper and refrigerate for about 20-30 minutes. This helps them firm up.
Serving
  1. Once chilled, your Blueberry Cheesecake Protein Bites are ready to enjoy! Store any leftovers in an airtight container in the fridge.

Notes

These bites can be enjoyed on their own or paired with a smoothie for a balanced breakfast. They can also be stored in the freezer for up to three months. If you’re out of Greek yogurt, you can substitute it with cottage cheese or a non-dairy yogurt option.
