  • 1 cup fresh blackberries Washed and dried.
  • 4 cups mixed salad greens Can include spinach, arugula, or spring mix.
  • 1/2 cup feta cheese (crumbled) Optional for a richer flavor.
  • 1/4 cup chopped pecans or walnuts Adds delightful crunch.
  • 1/4 cup balsamic vinaigrette Or dressing of your choice.
  • Salt and pepper To taste.

Preparation
  1. If you don’t have cooked chicken on hand, poach, grill, or roast your chicken breasts until cooked through. Allow them to cool before shredding or dicing.
  2. In a large mixing bowl, combine the mixed salad greens as the base of your salad.
  3. Gently fold in the cooked chicken along with the fresh blackberries, ensuring they are well distributed throughout the greens.
  4. If using feta cheese and nuts, sprinkle them on top of the salad for added flavor and texture.
  5. Drizzle balsamic vinaigrette over the salad and toss gently to coat the ingredients, being careful not to smash the blackberries.
  6. Taste and season with salt and pepper as desired. Serve immediately and enjoy your delightful Blackberry Chicken Salad!

Notes

Keep the salad ingredients separate until serving to maintain freshness. Dressings can cause greens to wilt if stored together.
