Preparation
- Rinse the shrimp under cold water and pat them dry with paper towels.
Cooking
- In a large skillet, heat the olive oil and butter over medium-high heat until melted and shimmering.
- Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.
- Add the shrimp to the pan in a single layer. Season with salt and pepper. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 2-3 minutes.
- Pour the lemon juice and zest over the shrimp. Toss to coat all the shrimp evenly in the garlic-lemon mixture.
- Remove from heat and garnish with freshly chopped parsley before serving. Enjoy!
Notes
Serve with fluffy jasmine rice, creamy mashed potatoes, a garden salad, or roasted vegetables. Great with iced lemonade or light white wine. Store leftovers in an airtight container for up to 2 days.
