  • 2 tablespoons olive oil Use quality extra virgin for enhanced taste.
  • 1 lemon Juice of Use fresh lemon juice for optimal flavor.
  • 1 teaspoon lemon zest Adds an extra lemony aroma.
  • to taste Salt Adjust based on preference.
  • to taste Pepper Freshly ground black pepper is best.
  • for garnish Fresh parsley, chopped Adds color and freshness.

Method
 

Preparation
  1. Rinse the shrimp under cold water and pat them dry with paper towels.
Cooking
  1. In a large skillet, heat the olive oil and butter over medium-high heat until melted and shimmering.
  2. Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.
  3. Add the shrimp to the pan in a single layer. Season with salt and pepper. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 2-3 minutes.
  4. Pour the lemon juice and zest over the shrimp. Toss to coat all the shrimp evenly in the garlic-lemon mixture.
  5. Remove from heat and garnish with freshly chopped parsley before serving. Enjoy!

Notes

Serve with fluffy jasmine rice, creamy mashed potatoes, a garden salad, or roasted vegetables. Great with iced lemonade or light white wine. Store leftovers in an airtight container for up to 2 days.
