Ingredients

For the marinade
  • 1 lb flank steak
  • ½ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste Salt and pepper
For the salad assembly
  • 2 large ripe tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • Fresh basil, for garnish

Method

Preparation
  1. In a small bowl, mix the balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  2. Place the flank steak in a resealable plastic bag, pour in the marinade, and let it sit in the refrigerator for at least 20 minutes.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Remove the steak from the marinade and let the excess drip off. Place the steak on the grill and cook for about 5-7 minutes per side, or until it reaches your desired doneness (145°F for medium-rare).
  3. Once cooked, remove it from the grill and let the steak rest for 5 minutes before slicing.
Assembly
  1. Slice the steak against the grain into thin strips.
  2. On a serving platter, layer the sliced tomatoes, mozzarella, and grilled flank steak.
  3. Garnish with fresh basil and a drizzle of balsamic glaze, if desired.

Notes

Letting the steak soak in the balsamic mixture enhances the flavor. Always slice flank steak against the grain for tender bites. Consider pairing with garlic bread or a light salad.
