Shrimp and Filling Ingredients
  • 1 pound large shrimp, peeled and deveined Opt for fresh or high-quality frozen shrimp.
  • 1 cup breadcrumbs (preferably seasoned) Can substitute with crushed crackers or panko.
  • 1/2 cup shredded cheese (like mozzarella or cheddar)
  • 1/4 cup minced onion
  • 1/4 cup bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons melted butter
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the peeled and deveined shrimp with Old Bay seasoning, salt, and black pepper. Toss well and set aside.
  3. In another bowl, combine breadcrumbs, shredded cheese, minced onion, chopped bell pepper, and minced garlic. Add the mayonnaise and lemon juice, mixing it evenly.
Assembling and Baking
  1. In a greased casserole dish, spread half of the shrimp mixture evenly.
  2. Layer the filling over it, followed by the remaining shrimp.
  3. Drizzle melted butter over the top.
  4. Bake the casserole in the preheated oven for about 30-35 minutes, or until the top is golden brown and the shrimp are cooked through.
  5. Once baked, allow it to cool for a few minutes, then garnish with fresh parsley. Serve warm.

Notes

Serve with a crisp garden salad, roasted veggies, or crusty bread. A chilled glass of lemon-infused iced tea or light white wine is a refreshing pairing.
