  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups almond milk (or your preferred milk)
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup sliced almonds (plus extra for topping)
  • 1 teaspoon ground cinnamon (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper or grease it with non-stick spray.
  2. In a large mixing bowl, whisk together the rolled oats, baking powder, salt, and ground cinnamon if using.
  3. In a separate bowl, combine the almond milk, maple syrup, and vanilla extract. Whisk until well blended.
  4. Pour the wet mixture into the dry ingredients, stirring until everything is nicely incorporated. Fold in the blueberries and sliced almonds gently.
  5. Transfer the mixture into the prepared baking dish, spreading it evenly. Top with a sprinkling of additional sliced almonds.
Baking
  1. Slide the dish into the preheated oven and bake for 25-30 minutes, or until the edges are golden and the center is slightly set.
Serving
  1. Once baked, let it cool for a few minutes before slicing. Serve warm, optionally drizzled with honey or topped with your favorite yogurt.

For best results, experiment with different types of oats or fruits. Adjust sweetness as desired and watch baking time to achieve the perfect consistency.
