  • 2 cups rolled oats
  • 1.75 cups milk dairy or non-dairy
  • 0.5 cup brown sugar or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup chocolate chips dark or semi-sweet
  • 1 teaspoon cinnamon optional
  • 1 pinch nutmeg optional

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish, preferably 8x8 inches or similar size.
  2. In a large bowl, mix the mashed bananas, milk, brown sugar (or honey), and vanilla extract. Stir until well combined.
  3. Sprinkle in the oats, baking powder, salt, and optional spices like cinnamon and nutmeg. Mix well until everything is combined evenly.
  4. Gently fold in half of the chocolate chips into the oat mixture.
  5. Transfer the mixture to the prepared baking dish, spreading it out evenly. Top with remaining chocolate chips.
Baking
  1. Bake for about 30-35 minutes or until the top is golden brown and the edges are set.
  2. Allow it to cool for a few minutes, then slice and serve warm! Optional: top with additional banana slices or a splash of milk.

Notes

Use overripe bananas for more sweetness. Consider adding nuts for crunch, adjusting sweetness according to taste, and experimenting with different spices.
