Preparation
- Shred the leftover or rotisserie chicken into bite-sized pieces and place it in a large bowl.
- In a separate bowl, mash the ripe avocado until smooth. Stir in the lime juice.
- Mix the mashed avocado with the shredded chicken until well blended. Add in the diced red onion and tomatoes.
- Fold in the Greek yogurt to make it creamy, or use more mashed avocado.
- Sprinkle salt and pepper to taste and mix thoroughly.
- Garnish with fresh cilantro if desired and serve immediately or refrigerate until ready to enjoy.
Notes
Store leftovers in an airtight container in the fridge for 2-3 days. To avoid browning, add extra lime juice.
