Ingredients
  

Main Ingredients
  • 2 cups cooked, shredded chicken (rotisserie works great!)
  • 1 ripe avocado mashed
  • 1 tablespoon lime juice To prevent browning of avocado
  • 1/4 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup plain Greek yogurt Alternatively, use more avocado if desired
  • to taste Salt and pepper
  • as needed Fresh cilantro for garnish Optional

Method
 

Preparation
  1. Shred the leftover or rotisserie chicken into bite-sized pieces and place it in a large bowl.
  2. In a separate bowl, mash the ripe avocado until smooth. Stir in the lime juice.
  3. Mix the mashed avocado with the shredded chicken until well blended. Add in the diced red onion and tomatoes.
  4. Fold in the Greek yogurt to make it creamy, or use more mashed avocado.
  5. Sprinkle salt and pepper to taste and mix thoroughly.
  6. Garnish with fresh cilantro if desired and serve immediately or refrigerate until ready to enjoy.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. To avoid browning, add extra lime juice.
