  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup apple butter Make sure it’s pure for fullest flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon (for dough)
  • 1/4 cup granulated sugar (for rolling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the apple butter, egg, and vanilla extract until fully combined.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, salt, and 2 teaspoons of cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix the additional granulated sugar and remaining cinnamon for rolling your cookies.
  7. Scoop out tablespoons of dough and roll them into balls. Roll each ball in the cinnamon-sugar mixture.
Baking
  1. Place the cookie balls on a parchment-lined baking sheet.
  2. Bake for 10-12 minutes, until the edges are slightly crisp but the centers remain soft.
  3. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To keep the cookies soft, do not overmix the dough. If you prefer a stronger apple flavor, substitute a little extra apple butter for some of the butter itself. Roll your cookies in the cinnamon-sugar mixture while they are still warm.
