Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the apple butter, egg, and vanilla extract until fully combined.
- In another bowl, whisk together the flour, baking soda, cream of tartar, salt, and 2 teaspoons of cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a small bowl, mix the additional granulated sugar and remaining cinnamon for rolling your cookies.
- Scoop out tablespoons of dough and roll them into balls. Roll each ball in the cinnamon-sugar mixture.
Baking
- Place the cookie balls on a parchment-lined baking sheet.
- Bake for 10-12 minutes, until the edges are slightly crisp but the centers remain soft.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep the cookies soft, do not overmix the dough. If you prefer a stronger apple flavor, substitute a little extra apple butter for some of the butter itself. Roll your cookies in the cinnamon-sugar mixture while they are still warm.
