Preparation
- Preheat your oven to 350°F (175°C) to ensure even cooking.
- In a large mixing bowl, combine the lemon cake mix and soda, gently folding until just blended.
- Grease a 9x13 inch baking pan with non-stick spray or line with parchment paper. Pour the batter into the pan and spread evenly.
Baking
- Bake in the preheated oven for 20-25 minutes until the top is golden and a toothpick inserted comes out clean.
Cooling and Serving
- Remove the pan from the oven and let the cake bars cool for about 10 minutes, then transfer to a wire rack to cool completely.
- Cut into squares and optionally top with a dusting of powdered sugar or fresh fruit before serving.
Notes
For a delightful twist, experiment with orange or lime soda. Store leftovers in an airtight container for up to three days and they can be frozen for up to three months.
