- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Add the shredded chicken to the skillet, stirring it in with the sautéed onion and garlic.
- Pour in the cream of chicken soup and milk (or chicken broth). Mix well to combine all the ingredients.
- Add the dried thyme, salt, and pepper to taste.
- Allow the mixture to simmer for about 5-10 minutes, stirring occasionally, until heated through and the flavors meld beautifully.
- Remove from heat and garnish with fresh parsley. Serve immediately over rice, noodles, or your choice of sides.
